  • 1½ cups cottage cheese (2%)

Directions

  1. Preheat a grill pan or outdoor grill over medium-high heat.
  2. Brush the cut sides of the peach halves with olive oil.
  3. Place peaches cut-side down on the grill. Cook 3-4 minutes until char marks form and the fruit softens slightly. Do not flip.
  4. While peaches grill, toast walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant.
  5. Divide cottage cheese between 2 bowls. Top each with 2 peach halves.
